In a word or four, the pig butchering demo class at Mado this past Sunday was "highly informative and recommended!"
It was also kind of beautiful in a way, hearing a knife scraping against the bone of an animal that had lived a good life, on a single farm, tended to by one farmer who then sold said animal to one butcher, who then carefully pulled and carved and sliced and diced the animal into parts that will provide meals to many people.
We are hosting most of the images snapped at Mado here, as to not upset any vegetarian readers. The actual story will be in tomorrow's pipeline-- if I ever finish writing it!
